Chocolate Amaretto Marquise

Ingredients:

7-8 amaretti biscuits (or alternatively, you can use shortbread cookies)
28.5 g (or 2 tablespoons) of raw almonds (toasted and finely chopped)

450 g (or 1 lb) semi-sweet and bittersweet chocolate (50/50 blend)
80 ml (or 1/3 cup) Amaretto liqueur
80 ml (or 1/3 cup) golden (or corn) syrup
480 ml (or 2 cups) heavy cream

unsweetened cocoa power (optional)




Preparation:

Lightly oil the bottom of a springform cake tin (approximately 23 cm or 9-inches. Traditionally, a heart-shaped cake tin is used). Next cut a piece of greaseproof paper or waxed paper and place it in the bottom of the tin, oiling that as well.

Also, it is best to toast your own almonds (so buy them raw). They can be toasted lightly over medium heat in a pan. However, they will cook quickly so remember to shuffle the almonds often once they have begun to toast.


Crust:

Crush the biscuits up into a fine powder and check to get any remaining chunks. Then combine the biscuit powder with the finely chopped toasted almonds and sprinkle this mixture evenly on the bottom of the tin. Pat it down lightly. Note that when you finish, the crust actually ends up on top.


Filling:

(1) Melt the chocolate, amaretto liqueur, and corn syrup in a saucepan over very low heat, stirring often. Once the mixture is smooth take it off the heat and let it cool for approximately 5-10 minutes or until it is warm to the touch.

(2) Whip the cream in a bowl so that it is just beginning to hold its shape.

(3) Stir a large spoonful of the cream into the chocolate mixture, and then quickly add in the rest of the cream, gently folding it into mixture.

(4) Pour the chocolate mixture over the crumbled biscuit crust in the springform tin and tap it lightly to release any air pockets.

(5) Cover and chill overnight.


Removal:

Run a warmed and dry blade around the edge of the tin, and then release the springform. Place your serving dish on top of the cake and gently flip it over so that the crust is now on top. Carefully peel off paper. If you wish, dust it with cocoa powder.
